![]() Barbeque Baby Back Ribs with Coconut Rum Guava GlazeSource: William "Willie" Batulayan, Saucier/Supervisor, Kauai Coconut Beach ResortSix Servings: 4 lbs baby back ribs SAUCE 2 oz coconut rum 1 qt. guava syrup ½ gal ketchup 2 whole oranges (juiced) 4 oz fresh sliced ginger 8 oz Grey Poupon METHOD Place all ingredients in a saucepan. Bring to a boil and simmer for 20 minutes. Grill the baby back ribs and coat on glaze to finish. ISLAND ROASTED CORN RELISH 1 C corn 1 C soaked, boiled black beans 1/3 cup minced red bell pepper 1/3 cup chopped Chinese parsley 1 T lime juice 1 tsp minced garlic salt & pepper to taste |
